In a demanding process widely considered to be a lost art, we roll hundreds of minute strands of shredded dough with imported pistachios. The baked kataifi is subtly enhanced by orange blossom syrup. While the crafting of this storied, threadlike pastry requires years of practice to master, our father, like the generations before him, taught us well.
